DVD9 To DVDR: Little question...

Hi all,
i'm new in this domain and i burn my first DVDR today with success.
My objectives are:
- Burn only on one DVDR
- Only Main Movie without Menus and Extras
- Only French AC3 (No DTS because it's too big) and subtitle in French
- Have the best quality

So here's my theorical procedure:
A)
1) Use DVD Decryptor to extract all
2) Use IFO Edit to select only the things needed (see above)
3) If Result < 4,37GB ==> Burn with Copy To DVD
Else Use of DVD2One ==> Burn with Copy To DVD
B)
1) Use DVD Decryptor to extract only things needed (see above)
2) If Result < 4,37GB ==> Burn with Copy To DVD
Else Use of DVD2One ==> Burn with Copy To DVD

My question is:
What's the difference in terms of quality between {A)1+2} and {B)1}

Addendum:

If result of ripping > 4,37 GB
For sample, Lord of the rings
For the audio, it has the AC3 in 448 kps, i would like to change it in 384 kps. How?
For the video, i would like to have the best quality. What's the best soft (time doesn't count)

as you are talking about foreign dvds, are you also doing pal-ntsc conversion ?

No,
my DVDs are in PAL Format, i make no conversion because it's not necessary for me (living in Belgium).
