I never had a chance to use ffmpeg in Mac OS X Snow Leopard, never tried to updrage it to Lion as everything is perfectly set-up and working just fine beyond imagination.

But, the procedure for ffmpegX would be same like other codecs.

Get ffmpegX either from VideoHelp or from here,
 And simply follow these steps:
 1) Control-click on the ffmpegX application, choose Show Package Contents from the pop-up menu, and navigate into Resources.
 2) Copy ffmpeg to /usr/local/bin.
 3) Execute the following in Terminal (as admin):

 sudo chown root:wheel /usr/local/bin/ffmpeg
 sudo chmod 755 /usr/local/bin/ffmpeg

 4) open the terminal, and type

 ffmpeg -h

if you see help, its already running in terminal.

Hope this will work for you.
