I'm using ripit4me and every dvd I backup the subtitles are on default. Can I change it somewhere in dvd shrink so that the subtitles are off by default or somewhere.

If it happened only every once in a while, I might agree with you. Since you say it happens every time, I'd be more likely to suspect your player as the culprit. If I were you, I'd have a look at the setup menu of your DVD player and see if you haven't got the subtitles turned on by default.

If you're using DVDShrink already to re-author a DVD, there's an easier way to turn subtitles off by default. After selecting the titles you want on the DVD, they will appear in the left pane. Right click on the title. The lowest option will be "set default streams." Click on this option. The lower panel is for subpicture, i.e. subtitles. The middle option is "hide subpicture." The subtitles will still be recorded, but now you will have to actively turn them on for them to appear as the movie is shown.
I don't know why, but every once in a while one of my movies will come through DVDShrink with the subtitles always appearing, and I have to turn them off. I found this trick, and now I routinely use it to make sure they are off and only show up when I want them to.
