On some dvds, the main movie audio files seem to be somewhat duplicated. There are two ac3-ch english audio files of different sizes. Should I keep both when I back up?

To maximize video quality you should never keep more than one audio stream.

How does one do that? Wait until they ar eripped and then open them using powerdvd? Can you use that to open them directly from the disc? Are directors commentary usually in the main moive files rather than extras?

When you have the original disc inserted, open PowerDVD or a similar program and watch the disc in it. Take note of which audio/subtitle track does what. Take note of where they occur in the list. If, for example, the disc starts with subtitles to translate what actors say in Dutch, note which subtitle stream in the list it is. Subtitle stream #4 in PowerDVD will be 4th on the list in DVDShrink.
