It all depends on taste. I liked the story arc of Deep Space Nine.

TOS and TNG are the best ST for various reasons. But both IMO are outdated.
Deep Space Nine is a Babylon 5 ripoff. I can't watch it for that reason (a huge B5 fan here)
The rest series are a joke. If you are about 12 or something, you may like them. -

I love all of the Star Trek series and never felt disappointed after watching any episode. My personal ranking is:
The Original Series
The Next Generation
Enterprise
Voyager
Deep Space 9
TOS is only listed before TNG because it came first, I can't actually choose between the two. Having watched both in their original run and original context, they were perfect for their respective time. The rest are very good, but are easy to rank based on my own personal preferences."Shut up Wesley!" -- Captain Jean-Luc Picard

You are probably going to get a lot of differing responses.
Honestly I enjoyed all of the Star Trek series. If I had to pick my ultimate favorite it would have to be TOS (The Original Series). There is just something about it that makes it special.

The original series was and is the best.
A lot of people like The Next Generation. I thought it was only OK. Not bad but not really great. Perhaps good but nothing to get excited about.
Deep Space Nine was the worst garbage ever.
Due to that disaster (Deep Space Nine) I almost completely skipped Voyager. I did see a handful of episodes. Maybe 4 if that. I liked one of them and didn't care for the others. Granted that's not really fair based on such limited viewing.
Enterprise kicked ass on many levels. It died mostly due to lackluster ratings AND the demise of the channel that it existed on ... The UPN.
Had UPN not died the show would have continued as it was getting good enough ratings to continue BUT with the death of UPN it was canceled which I suppose might not have happened if the ratings were really really good but ...
Let me put it like this ... most people didn't see the kick-assness of Enterprise. Why? I can only surmise most people are idiots. Look at how many love the borefest that was Deep Space Nine or think Picard is a "better" captain than Kirk.

IMHO, Enterprise Season 3 is the best season of any of the series, followed by Voyager Seasons 3-7. At the time, Star Trek was the best series on TV (this was before it acquired its "TOS" moniker) and it remained very popular in syndication for the "dark years" between its cancellation and Star Trek, TNG.
The worst Star Trek series was Deep Space Nine - a totally unwatchable piece of crap.
But then, I may be wrong!ICBM target coordinates:

It really depends most on the person you're giving the DVDs to. There are two broad groups of "Star Trek" viewers: those with an emotional, vested interest in a particular "Trek" because it was originally shown in their formative years, and casual fans who just like SciFi in general and don't have a specific "Trek" variation burned into their skull. Another major factor is age: those over 40 almost always prefer the original series from the '60s, those under 40 generally prefer TNG because it was THE phenomenon when they were teens/twentysomething. Those two are the major "general purpose" gift options. The other peripheral series are more of a crapshoot: people either love them or hate them, and it can be an expensive gift gamble unless your "giftee" has expresed a definite interest in one of them.
"Voyager" was touch and go but ended its run with with a number of pretty decent episodes. Fans are split between the "pre-Jeri-Ryan" and "post-Jeri-Ryan" periods. Personally, I think "Seven" was the most smokin hot female character to ever appear in any TV series: her charisma, physicality and personality quirks wre mesmerizing and seemed to juice up the other actor's performances. In the end I think "Seven" was a net positive even though she sort of took the focus from other character's development. "Deep Space Nine" is the very definition of "cult show": it makes "Twin Peaks" seem simple. No middle ground on this one: either its right up your alley, or you loathe it. Bad gift idea unless you're sure the recipient is a fan. I enjoyed "Enterprise" the first season but then it lost me, most likely due to scheduling changes. Its probably the most "realistic" series in the ST universe, which again polarizes viewers: it either grabs you by the throat or you just don't get it at all. So again, bad gift idea unless you know for sure the person likes it.
Myself, I found TNG too pretentious for its own good during its original run, and I knew a few too many geeks who were obsessed with it to the point of needing therapy: really put me off viewing it objectively. Later on, in syndicated reruns, I did appreciate it more and could understand why it had such a following, but I never got over the sense it was off-putting. For me, nothing can touch the original '60s Star Trek: its just killer. If you didn't grow up in those times, it can seem really dated, but thats also what makes it great if you go for that sort of feel. The cast chemistry was unbelievable, the guest stars were cool 60s character actors, the whole series just "clicks" the best. I was too young to "get it" during its first run, like most fans I picked up on it during the '70s syndication. There are several different versions of TOS on dvd: I prefer the original unrestored untampered episodes sold "2 per dvd", but those are no longer available new. I bought my set on eBay for $80, original price was around $1000 so quite a sweet deal. The second version was season bundles, the DVDs became double-layer which had some playback glitches. The third version was the Toshiba HD-DVD "hi def" restorations- the version now running in syndication. The restoration gets rid of the hokey original F/X in favor of improved CGI, which kills the whole deal for me but others love it. The fourth version, available currently, is the same as the Toshiba but minus the Hi Def discs, the package now includes only standard DVDs. -

If you haven't seen any Trek before, start with the original, 1960s, series.
Whatever the virtues of the later series, they all build on TOS. The chemistry between Kirk, Spock and Bones is terrific.
Note that Paramount has been re-releasing these with new effects, though they are still obviously of their period.

Gee how come nobody has mentioned the second short lived series Star Trek TAS. They actually had life support belts.

I agree with an earlier post, while I like Star Trek, Babylon 5 blows it away. You can only fully appreciate it after watching all of it. It is one big story where you find things out in the third season that they set up in the first movie! I have all 5 seasons the spin off and the movies. If I ever get board or just want something to watch B5 delivers.
I always liked Deep Space 9, I never thought of it as a knock-off of B5, but now that you mention it....... -
If you were looking to save some money and only wanted the best-of-the-best, then...
The seventh (final) season of: The Next Generation, and...
The very last episode of the Enterprise series titled: These are the Voyages.

Oh man, a bunch of Trekies? I had a tough decision during the original run between Star Trek and The Avengers both 10PM Friday. I voted The Avengers but picked up Star Trek in summer reruns and later in syndication.
Much later I got the chance to know the Star Trek TNG contributors at The Post Group, LA. It was a lab for video special effects in the time along with Max Headroom and several films (e.g. Flatliners and the closing scene in Ghost which were done in 4:4:4:4 601 video).
I think I saw all of the first three seasons of TNG. I'm still finding episodes of the original series that I missed. Blame Emma Peel.Recommends: Kiva.org - Loans that change lives.

Voyager ... first two episodes ... Care Taker ... and then the last two episodes ... Endgame
They did get home
End Game was good ... they had to fight it out with the Borg ... using Technology from the future that the Borg had problems fighting against.
