Unless you are going to make changes to the avs script, there isn't a lot you need to worry about. Bitrate is calculated for you by DVD RB, but if you wan't to see approximately what DVD RB will be using, you can use the bitrate calculator on this site ( https://www.videohelp.com/calc.htm ) it won't be exactly the same because DVD RB leaves itself a little space on the disk.
The other settings, found under Advanced Settings in CCE Options menu, I have set to
VBR_Bias 25
Quality Prec 16
VBR_Passes set to either 2 or 3 depending on how much it has to do. If you are using CCE basic then you don't get an option to change the number of passes.
That's pretty much all there is to it. The whole point of DVD RB was to simplify the process, which it does well.
Do you have specific problems or concerns from DVD's you have backed up, or just getting paranoid in advance ?Read my blog here.

If you're really determined to get the best quality, look first at Quality Precision (or Flat Part Priority). Set this number lower to free up bits for motion and fine detail. This comes at the expense of bits for solid surfaces (or flat parts). Go too low and you'll get "banding" and other artifacting. The optimum, if there is such a thing, will vary by a particular movie's bitrate, running time, how much motion it contains, blah blah. Look here:

If I'm not much mistaken, DVDRebuilder Pro has an option to use several matrices optimized by bitrate. I.E. low-bitrate matrix, standard, high, etc. What is it, a $10 donation? Might be worth it to you.
[EDIT] Those matrices in DVDRB-Pro are for CCE only, IIRC.Pull! Bang! Darn!
