Does anyone have any experience with Air Mail from the UK to Australia? Just wondering how long it would take for a parcel to arrive using it from there to here?

I sent quite a few last year (mostly shoebox size) and understand they took around a fortnight, on average.

Does the UK have any faster method of postage? Like FedEx or similar that could reduce the time down to like a week or less?

Just looking at buying something off eBay for a present and want it here before Christmas.

In my honest opinion; you've no chance.
The aire mail costs out of here are sooooooo expensive anyway, especially on heavier items, they just don't seem to equate to those prices I've paid for incoming goods.
Your source won't be able to commit to a delivery before Christmas pac, simply because us Brits really have no idea what to expect from our postal service.

A letter from London to Sydney is usually 5 days or so and a letter from New York is usually about 10-14 days.
