And what methods do you use to attain optimum results?
My specific use is capturing DV from my DV camcorder with a firewire connection and then transcoding and burning the .AVI capture file to DVD. 2 channel audio OK for me. Not looking for excess complication.

I personally use Ulead Video Wave 6 to capture to AVI. Add my music/transition/titles - a whole lot easier to use than premier. Premier is more powerful but a bit complicated.
I keep it in AVI format and import to Ulead DVD Workshop without converting to MPEG2. I use my jpegs for menus and create buttons using the Video. Add music to the menus (without motion) or it will repeat the music every 10 secs. I compile to the DVD folders.
Then I burn with Prassi Primo instead of Nero (some bugs once in a while, also Prassi works better with cheap media).
If I'm ripping movies, I will use DVD Maestro instead.
