    Is there a way I can easily or automatically deselect all the subtitles? It's a pain to click them one by one.

    No easy way,just uncheck one at a time.

    If you want, you can demux the MKV with MKVextractGUI, then grab the resulting .h264 file and audio file (.aac, .ac3...) and drag those into MKVmergeGUI, if you don't like unchecking boxes. What usually happens is you end up with a folder of all the attachments, and you can throw out what you don't want, and mux from there.
