Fundamentally, DVD Players require either MPEG-1 or MPEG-2, encoded and authored to DVD Specs to be able to be played on a settop DVD player. Some players can play raw (unauthored) MPEG-1/2, and/or DivX/Xvid, generally within an AVI container.
What you use depends on the capabilities of your own DVD player, or alternatively, the DVD player(s) you will be using to play back this material. DVD-Spec authored MPEG-1 or MPEG-2 should play on all DVD players, so it might be a safe bet to aim for this until you can determine if your player supports these alternative formats. If in doubt, Google it.
