Is there any way to re-author a DVD making no changes (keeping all menus) except for having the sound re-encoded from PCM to AC-3?

(I have made a DVD with maximum video bitrate and 2 PCM audio tracks, and the total bitrate causes problems on some DVD players)

No simple way AFAIK - As you've authored it yourself, it should be a simple matter of encoding the wavs to AC3 (or mp2) and author it again from your source material. Some authoring apps even have the ability to encode wav to AC3 as part of the authoring process, so there might not even be need for manually encoding the wav to AC3 - just check the correct check box!

I found a backup of the project file!

After demultiplexing, AC-3 encoding and re-authoring it works just fine!
