  1. i want to rip a dvd then run through dvd shrink to reduce to fit on to a dvd-r

my problem is that even with max compression its still above the 4.wat ever Gb

what i want to do is remove one of the extras (which is approx 1.5GB), then repace this with a 1sec blank screen ((or simlar) or screen saying deleted due to size)

can i remove the vobs from my ripped directory (i know which ones they are) and just replace with a new vob i.e. vts_05.vob

do i kneed to alter ifo file / or in doing this will it cause major problems

What you can do is either use DVD decrypter in file mode and select all the files and then just delete the ones you don't want, and then run it through ifoedt. Or you can just us ifoedit and select which files you want and don't want.
