Now that I've learned how to use Videopack 4 to add CDDA tracks to my VCD, how do I then rip out the audio from the CDDA folder at a later date? I'm sure I'll want to do that at some point once I master everything else.

They're probably rip'able using ordinary audio disc ripping tools. Okay, I haven't actually tried it, but they are ordinary audio tracks so it seems like it ought to work.
Doubtless you could extract it with CDRWin in any event. -
Actually Videopack for makes the CDDA tracks into .DAT files just like the MPEG tracks. I thought that was strange since they're stored as .CDA files on a normal audio CD (or are they?).
When I pop this standard hybrid VCD/CDDA disk into an audio-only CD player, it just skips over all the video and starts playing the audio (no noise, no attempt to play the video tracks as silent audio tracks ... nothing).
Maybe you could rip out the audio**.dat with whatever program you rip out the mpeg from avseq**.dat. Hmmm...
