From the following log:-

What are the consequences of this? Assuming a film cannot possibly occupy more than 100% of a DVD, what does the software do to the file to make a complete and working DVD? Also, I see the message quite a lot in simply converting 700mb films to disc - could someone explain why? (I use high quality/slow encoding btw).

It simply overshot it's target.
DVD5 has a capacity of about 4480MB. So you are safe.
If you'd like to be safer you can set the convertX target to a custom size lower than the default preset under the encoder tab in settings.
Nothing is lost if the filesize is over the DVD's capacity btw. It simply won't burn. -
ConvertXtoDVD sets a conservative target size well below the total capacity of a DVD5 disc. It then uses a single pass VBR encode, which is not 100% accurate at hitting target file sizes, but is much faster than some other methods. If you were getting 105 or 110% then you would have reason to be concerned. That you are getting such a small overflow is understandable given the way ConvertXtoDVD works.

if your are really worried about burning a coaster
do like was sugested, set a custom size , say 4200 and run it, you will be under the limit, the file will burn and play on the DVD -
No worries about coasters, so long as the problem is solved in the end I also get to protect my coffee table
Thanks for your info - the disc will still burn and play despite this 'over-occupation' warning, with no apparent side-effects. -
Think of it this way;
You have a bus with 62 seats. You only ever pick up 58 passengers, so you have a few spare for emergencies. One day you pick 59 passengers. You have gone over your own limit, but you have not gone over the bus's capacity.
