Say I got a commercial DVD, and I like the way its menus are organized, and I want to imitate its structure using the regular stuff like DVDAuthorGUI. Is there something out there that can sort of "decompile" the PGC or menu tree so I can study how it's done? I guess I just need to figure out like thus button does this and links there, and so on and so forth.

I think pgcedit might be something you could look into it.
Donatello - The Shredder? Michelangelo - Maybe all that hardware is for making coleslaw?

Okay, how about decompiling DVD menus?

Something that'll extract all the screens, transitions, button animations, and either dump it all to an XML / HTML document, or display in program?
