    There are cheap TV cards with Composite and S-Video In that would allow you to capture uncompressed video using VirtualDub, video that later on you can encode into a DVD or DivX movie.

    I do not own a ps2, but I guess they come with S-Video out connector you could use for this purpose. Keep in mind you need a decent machine with plenty hard disk space.
