Generally, how do people find DVDs made from ffmpegx with ac3 sound for compatibility with standalone players. I work with students, and I was thinking of putting an end of year DVD together and was interested in encoding to DVD with FFmpegX and Sizzle. The sources will be DV .avi or DV .movs probably.
Any major headaches/disasters out there?

I use ffmpeggui's AC3 encoder, which I believe is the same encoding engine, at 256K. I have never had a compliance issue with it.
