Eliminating sounds from a soundtrack is very complex unless you want to mute all sound at a given time. If you just want to remove i.e. the sound of a car, you would have to locate the exact frequencies the car sound emitts, lower the volume and hope it didn't remove other sounds in the same frequency-range. To put it in simple words, removing loud dominant sounds is impossible, removing faint noises (noise-reduction, birds in the distance) can be done with the right software. When remixing the sound I'd suggest you use Vegas Video, it will allow you to mix from 1 to 7.2 channels, even though there's no paticular function for it.

A lot of high-end audio editing packages have the ability to do this kind of editing, but it takes time and knowledge to do it right. If you don't use an integrated package like VV, then you could separate the audio and fix it up, then re-merge it with the video. That's getting a bit more complicated, so it all depends on how much time you have. If you can't find suitable tutorials or threads discussing this, check doom9.org or web sites that specialize in audio.
