I have 2 mkv from a film:
Video 1: x264, 1280 x 536, 5727 Kbps, 6.75 GB
Video 2: x264, 720 x 576, 6382 Kbps, 5.22 GB
I want delete some scenes with Avidemux.
Then I want store the film on my pc and watch it later on my pc-monitor (1280 x 1024 pixels).
To make it smaller, I want with Avidemux new decode the film to x264 with CRF19 or framerate 2000.
My question for the profis: What is the better video for me (qualitiy), video 1 or 2 ?
And why (if you want to answer)?

You may have a problem there: if those files contained ONLY the single video stream with no audio or other streams, your first file amounts to 9887.045 seconds, while the seconds amounts to 6861.256 seconds. So one clip is 3025.789 seconds longer.
Unless of course you have audio or other streams included. In which case, you haven't given us near enough info to make any determination at all.

Nobody can tell you which video is better by examining statistics. You have to LOOK at the videos with your eyes to see which is better.

...but one can make a few assumptions.
The 2nd video looks to be a MKV-rewrap of standard MPEG2 DVD material. It contains anamorphic display (either 16:9 native or ~2.4:1 padded to 16:9). It is, however, NOT as efficient as AVC/h264 (and you are incorrect in your original post: video2 is NOT encoded with x264 encoder).
It may be an original, or it may be a first generation PAL version from a film. Video #1 could be a first generation from a film (after inverse telecine), or it may be a 2nd generation from Video #2. It's also possible, but not likely, that Video #2 is a 2nd gen from Video #1.
Note that V2 is VBR. V1 is NOT, it is CBR, which is a shameful waste of good bitrate. If it IS a 2nd gen from V2, it makes no sense to do all that other stuff (IVTC, crop-to-native-ultrawide-squarepixel) and then waste the compression on CBR.
Of course, there is a 5 minute discrepancy between the 2 videos - that's a lot to have to correct & resync! Better to GO BACK TO A KNOWN GOOD SOURCE, and work from there.
