Ths seems simple enough and I feel silly asking..........

How do I set up my Microsoft Office 2007 - Excel, Word, Powerpoint, Publisher
so that when I go to write someting it goes automatically (defaults) to Ariel? The factory presets it to Calabri

You need to edit the default templates for Word (.dot) and Powerpoint (.pot). e.g., for Word, create a new document, change all the font settings and then save it as a new template or close it and Word should ask you if you want to update your default template with the changes you made. If Excel 2007 is like the earlier versions, it is under the equivalent of Tools\Options\General.
