I have 20 or so XVid files, between them adding up to 8.53 GB. What's the best way to fit them on an 8.5 GB DVD?

Depends what they are.
Options include :
1. Trimming end credits. You might be able to do this in Virtualdub in Direct Stream Copy mode and avoid re-encoding.
2. Re-encode audio to grad a little back from each file.
3. Select a handful of files to re-encode complete to make smaller.
4. Put 19 files on the disc instead.Read my blog here.

I would check their audio formats and settings. You can lower the audio quality and save a fair amount of space and you won't notice lower audio quality near as much as lower video quality. And audio re-encodes a lot faster.
