Is there any utility that allows you to merge several DVDs into a single DVD while maintaining all the original menu & chapters ?
I have several DVDs that are only 1 GB - 1.2GB in size, so it is nice if I can back it up to a single DVD.
I only found 1 utility called DVDRemake Pro, but it not good for editing the disc title menu. It only says DISC1, DISC2, DISC3, etc. from what I heard.
Another question is whether the result will still be DVD compliant ?

You could always create a custom main menu after joining with DVDRemake Pro. I've done this a couple times and the default menu does look kinda corny. So I created a new one and used a combo of vobblanker and pgcedit to replace with the new one instead.
The only other way that I know of I've seen on doom9. If you want to check this thread out: http://forum.doom9.org/showthread.php?t=96211
