Where "capturing" is concerned,what's the difference between these files? VOB, AVI and DVD

I wish to capture movies from TV and also copy DVD's/movies to my HD then burn back unto blank DVD's, I want the best quality I can have so I will capture from in DVD format but I want to make sure that when I copy a DVD movie that I have the space to burn it back unto a regular 4.7GB blank.

My recommendation to you is to read, read and then read some more.
Avail yourself of every guide on video capturing, rendering and authoring, and when you're familiar with some of the tools, come back and read some more.

A "DVD" is not a file, it is a type of media. DVD compatibility requires MPG files with specific parameters.
VOB files are one of the types of structures into which files on a DVD are grouped.
AVI can describe many types of files, such as uncompressed, Indeo, Divx, Xvid, dozens more, and more to come.
You could capture to one of many types of AVI for re-encoding to DVD, to MPG, or to DVD-compatible MPG, which is not necessarily the same thing. You cannot capture to VOB.
