A documentary captured from TV has only 1 audio track (right track) -- probably due to loose connection on the audio cable. How can I double it so that I'll have 2 audio trackd (though mono, of course)?

Load it into an audio editor. Most will allow you to create a stereo track from a mono (probably called joint stereo). Otherwise, copy the mono track, open a new, empty, stereo track, and paste it into both channels.
