    Nero? To author? Barf.

As far as starting with an AVI source, you need to do some reading.
You have to first convert to MPEG.
    Then author.
    Then burn.

I use the TMPGenc suite of products to encode from AVI to MPEG, and then use TMPGenc Author to create the DVD structure (the VOBs etc.), and finally I use Nero to burn the DVD.

If by record you mean captur the video, the best is usally the softwre that came with your card. Capture cards usally have there own recoding utility, it works best because it's designed to work with that specific unit. Note that if your "capturing" from a DV cam any software will do.

Frpom that point for editing and authoring there's a numerous applications available from all-in-one consumer apps like the aformentioned Nero up high end editors that can get quite expensive, which one depends on your needs. Suggest you try one of the cheaper ones not as a permanent solution but to get your feet wet so you understand the basics. Most come with free trials.
