Is there a simple and free program that will let me take just the audio from a DVD and put it on a CD? I rip my DVDs in file mode with Decrypter and have a VIDEO_TS folder with a bunch of VTSes, so I don't even know which ones are audio.

Adobe Audition 1.5 (formerly Cool Edit Pro) allows you to extract audio from video with just the click of a button... isn't free, though. Check e-bay, you may be able to pick it up cheap.

Check out the DVD ripper section under the tools section of this fourum.
Many tools like #1 DVD Audio Ripper, DVD Audio Extractor etc are available just for this.
