While encoding... should I turn the monitor off or leave it on? I don't want to leave it on, because the top of my monitor would get really hot. I'm just wonderin' if it's okay.

The monitor is just an output device.....it does not matter if the monitor is on or off while the encoding is on as the entire processing is done inside the machine and not in the monitor.
