I am capturing VHS tapes in MPEG2. Would there be any improvement in quality of image if captured via S video instead of composite video?

Yes - you *should* see an improvement if you capture Y/C (SVIDEO) over CVBS (Composite). This is a conditional since it depends if the hardware is capable of the extra bandwidth (most should be). In analog, the more pairs to carry the signal, the better it is.

No question that S video is superior in image quality to composite.....
