Should I capture audio from a cable source at 44100 Hz, 16 bit, and stereo? Or are there better settings I should use?

If your making a VCD then that's probably your best bet, it's CD quality and what you want to end up with. If you have trouble and your using a SBLive then try at 48000 (all audio is processed at that in the card anyway, so it's downsampling while capturing), though I don't have any trouble with 44100
