Good morning, I think it can be done easily with pgcEdit but I can't find how.
when I delete an audio track that wasn't on the original DVD (with clonedvd For example), and I delete it with pgcedit in domain track attributtes, The two original tracks, one in 5.1 and the other in 2.0, are displayed in reverse order to what they should be, depending on the menu button I press.
Could someone help?

The order of the streams is determined by the stream numbers in the PGC. Select Edit PGC and you should see the stream numbers. When they are in the correct order, you may have to edit also the Domain stream attributes (your screenshot) so that lhe right attribute corresponds to the righr track. Check carefully in Trace mode before burning.
