I used Adobe Premiere 6.5 and usually create titles for my still images. I would like to get away from this and use subtitles instead due to the fact that I can turn them on and off unlike the titles that are encoded with the video. I've read through numerous user guides and posts and all seem more geared to changing or adding to current DVD that contain subtitles. I guess my question is there an easy solution given that I get and a m2v vidoe file and a ac3 audio (actually a wav but then convert)? My next step is to author with DVDAutotherGui.

Subtitles are added during the authoring stage if you want switchable subs. There are a number of tools to create these - subtitle workshop seems to be pretty comprehensive. I haven't used DVDAuthorGUI, so you would have to look at the documentation for it to work out which subtitle formats it can read, and how to add them.
