If all the VTS_01_X.* files on a DVD equal out to more then 4.7 GB, there is no way to get it on one DVDR?

There are 3 choices when backing up a DVD to DVD-R.
1) If the DVD is DVD-9/1 layer, then you can make a FULL backup of it (menus, extras, etc). The easiest way to do this is w/ DVD Decryptor
2) If the DVD is a DVD-9/layer 2 disc, but the main movie (ie. w/o the menus, extras, etc) is less than 4.7GB you can just copy the movie (with the audio and subtitle streams you want). The easist way to do this is with IFOEdit
3) If the Movie (w/o extras) is still larger than 4.7GB you can either put it on 2 DVD-R's, OR re-encode it at a lower bitrate to fit on one DVD-R (sort of like an xDVD or really nice xSVCD). If you so choose you can even keep the extras:

If you read both guides it's all pretty easy. Note that for option #2 IFOEdit is MUCH easier than de-muxing/muxing/authoring, esp if you want to keep (synced) subtitles.
