Ripping SS-DL DVD9 with 16x9 and P&S to DVD-R

Take the movie Leaving Las Vegas NTSC R1 by MGM for eg. It is a SS-DL disc that has both P&S and the Widescreen on one side. When you put in the DVD it goes the main menu. If you choose PLAY MOVIE it asks whether you want the P&S version or the WS version.

What I want to know is can I use something like IFOEdit or similar to make a version that I could burn back to DVD-r that when you press PLAY MOVIE it just plays the WS version as that's all I care for. This way and I can keep the menu and the chapters section etc.

I know how to rip just the movie and have it play but I'm wondering if what I want to do above can be done.

Please advise if you know as I have not tried this yet and would like to...

So I guess no one has done this before? I'm sure I read somewhere that somebody had done this.. I guess I'll have to try and fool around with it myself and see if it can be done. I asked first because if someone else has already done it and can explain how they did it it makes life a lot easier..
