So I made a copy of my Shallow Hal DVD by connecting my DVD player to my wintv card and capturing the same way I do TV shows. Turned out OK I guess. But this Ripping method will do the same thing for me? Which way is better, the way I did it or this ripping method?

The ripping method is better, You get an exact digital copy. Even if you are going to convert it to vcd is always wise to start with the best souce possible. You will always have quality loss when running it through a capture card.
