I just bought a MiniDV camera with 1394 out. I can go to iMovie and it will caopoture the video at 720x480 as it is NTSC. Is that the best option or is there a better option?

As long as iMovie preserves it as interlaced, it is all good.
I do not capture on Mac, but I've heard that Quicktime converts interlaced to progressive (25p/30p) when capturing interlaced video - you don't want this -, while iMovie and FCP keep it interlaced.
