    I'm using Plex and my 7.1 TrueHD encoded movies aren't playing well on the Roku (causing crashes). I'm aware of software that will allow me to re-encode just the audio portion, but will it allow me to remix from 7.1 down to 5.1? Thanks.

    Try Avidemux, there are a bunch of mixing options for ac/3 audio

    PopCorn MKV AudioConverter https://www.videohelp.com/software/PopCorn-MKV-AudioConverter will do what you want and a whole lot more if required. Just does the Audio track in situ
