How to use the SeparateFields mode without dominating fields? I need to work with the original order of the fields to make the video jerky.

Your question doesn't make sense.
The only difference between ODD-EVEN-ODD-EVEN and EVEN-ODD-EVEN-ODD is which one starts first. You may not know which one starts first, but clearly ONE of them HAD to start first. Choose one, check it. If it doesn't look right, choose the other. That's what Field Dominance refers to.
