The BD 8509S is a Blu-Ray player with a 1TB Hard drive so when you say "Format Disc" I assume you are talking about the hard drive as this unit can't record to BD Discs.

Page 44 of the manual says that formatting the drive is done in the "Storage Device Manager" but it doesn't say how to get there!. Probably in the settings or menu, look for that.
Page 71 of the manual says that Schedule Recording is handled in the "Schedule Manager" via the Home Screen.

Here's a link to the English Manual and the German Manual

Thanks for the answer, but you are mis-informed, my unit has 500GB HDD and can record to DVD's, I must have an older version.

The other problem I have is that there is no way to connect my UK Sky receiver to the recorder, without losing the encrypted channels. The recorder will only search at 19.2 E and not 28.2 E. Using a sat cable splitter, I believe will not work, as I think the receiver sat input does not give an output. Unless others know better.

Have just found out that I can select RF output to on, on Sky receiver. Hoping if I do this and connect to DVD recorder sat input, it will work, fingers crossed.

The recorder can't tune SAT channels. And the Sky box is not going to output in a format for the recorder to "tune". You will need to use a video output of the Sky box to a video input of the recorder. The Sky box will be used to select the channel, and the recorder will simply capture the video input. Whether or not the encrypted channels will record will depend on the type of port used to output the video and what is actually supported by the Sky box.

All you need is a common port type between each unit and a cable. For example, HDMI output of the Sky box to a HDMI input of the recorder.

I'm not familiar with either of those units, so I have no idea what your options are on each unit.
