best way to back them up?
via av cables or the antenna cable?
i will be backing them up to 720x576 25fps mpeg2 5000kbps audio 192kb ac3

av cables. Always. From your chosen bitrate I would assume you are capturing directly from VHS to MPEG wih no intermediate processing or cleanup. This is the worst method, but that's what many do. The tape will look better than the MPEG. A bitrate of 5000 is too low for raw analog capture without cleanup. But it will work.
