  1. I'd like to take 10-15 Gb MKV / M2TS files (mix of 1080P24 / 1080i60 video and AC3/DD2.0/DTS audio) and burn them onto a pair of DL-DVDs so that they can playback on a PS3 as a simple load and press play 'movie'.

    Specific examples are 12Gb 1080i60/DD2.0 m2ts and 14.5Gb 1080P24/DTS.

    Is there anything that can split the files, remux (not transcode) and create the appropriate stuctures automatically?

    check out multiavchd. It should do what you want with a little exploration.

    However your dts might be an issue. Also I don't know about the 60 and 24 aspect.

    Check that - I think multiavchd will reencode to avchd if its not to spec. I don't know the full spec for avchd.

    What you could try is something like tsmuxer and go from there. THan burn to verbatim dual layer discs with imgburn.
