I've never used ffmpegx so i cant help you with that, but this couple of days i have done some srt embedding to avi with virtualdub using plugin textsub 2.23 (from vobsub223), and it cant be easier than that.
Load avi, set audio direct copy, video full compression(or smart rendering ?) and choose the codec you want(tweak the compression settings), add video filter textsub, load the srt, set the style/font size-position/color.. you want, and save as avi.

pirej: ffmpegx is a Mac OS X program. The OP probably won't be able to use VirtualDub on a Macbook.
If cameras add ten pounds, why would people want to eat them?

To get subtitles (hardcoded, as part of the video) in an AVI file with ffmpegX, you need to use a mencoder preset, e.g. "XviD mencoder" (screenshot).

To find out why it did so, I would have to take a look at the Process Information log. You may access this log by clicking the blue "i" in the ffmpegX Progress window after a conversion attempt. Please copy that log here.

Not even an error message! I think perhaps mencoder and mplayer are missing or weren't installed correctly.

Did you unzip the downloaded file and use the Locate buttons to point to the binaries inside the unzipped folder?

Please see this post about the same issue.

Note that mpeg2enc is not essential for the conversion you are doing now, as it is only used for encoding to MPEG-1/MPEG-2.
