Hi, in extracting audio from DVD using VirtualDubMod do I have to do this on a VOB- by-VOB basis?

DVDDecrypter is much easier if your DVD is not "ganz neu".
    IFO Mode
    Stream Processing
    Enable Stream Processing
    Un-check the video stream
    Check audio stream
    Select your destination
    GO

You can also set DVDDecrypter to give you one, giant piece of audio
or set it to give you "chapters" - individual songs from a concert DVD.

I don't know if you're really running Linux, but if you can run PGCDemux, that is a better choice to demux audio (as AC3), combining however many VOBs as necessary.
