I have the 1st two seasons of the unit on dvd and I'm trying to convert them to video files for archiving. Disk 1 has like 4 episodes on it, and I'm trying to make 1 mpg file for each episode. If anyone can point me to a guide on doing this I'd really appreciate it.

Lots of ways. One that comes to mind is to use VOB2MPG to turn VOB titlesets into mpg.
Or...
If the video has multiple audio tracks, you could merge each episode's VOB files into a single VOB using VOBMerge, then demux the merged VOBs with PgcDemux, then remux only the video and audio streams you want into an mpg file with ImagoMPEG-Muxer.
