I think Handbrake can do what you want, but I've never used it. People I know who are Mac fanboys love it. I have a Mac through work, but I don't use it for any video work so I have no personal experience here.
If by "copy parts from the DVD" you mean select certain segments like from counter 00:10:00 to 00:12:00, I have no idea. If you mean only copy the movie and not the trailers and such, yes, I think handbrake can do that. -
If the DVD isn't copy-protected, MPEG Streamclip will do this and let you edit out certain parts when you "save as..." to whatever format you want. I usually use H264/MP4 at around 1100-1300kbps for good quality although "action" movies sometimes require a little higher bitrate. However, you will need Apple MPEG2 component (around $20-30). This is a worthwhile cost as it lets MPEG2 content play everywhere (and not just in the DVD player app).
If the disc is a commercial DVD with some sort of DRM/Copy-protection, Handbrake works well. You don't need Apple's MPEG2 component for Handbrake.
