Yes, it is quite possible. All you need to do is extract (demux) the audio out, convert to 5.1 AC3 then remux the new audio back in. Of course, you'll need a high quality audio source to begin with - converting something to 5.1 can be quite tedious and won't instantly improve a highly compressed source, for instance.

It may be advisable to extract to WAV if the source is VBR MP3 - http://members.dodo.net.au/~jimmalenko/ExtractAudio.htm can assist here. Then you'd be looking at virtualdubmod or AVIMuxGUI to demux/remux the audio out/in. There's a few different softwares to do the conversion to 5.1.
    If in doubt, Google it.

You will only have one or two wave tracks. You need to go to the source to find the 5.1 tracks and remux those in. Good luck.

Yes, quite possible if you have the 5.1 AC3 track. Just use it in the AVI. If all you have is a stereo wav (or even worse stereo MP3) - forget it.

You can convert the audio to DD5.1 driectly from the avi with ADC Tools, and re-mux it with VdubMod.

ADC Tools comes with Audio DVD Creator http://www.audio-dvd-creator.com/

Another option might be Aud-X. It creates mp3 5.1 (surround) sound and is made to work with Divx and Xvid formats. You need a 5.1 audio source to start with, though. Trying to create one out of a 2 channel source (Stereo) may be a lot of work for probably mediocre results.
