I like convertXToDVD as far as the all-in-ones go, but there's no reason why you can't combine AVISynth, QUEnc and dvdauthorgui for a completely free solution using dedicated tools.
    If in doubt, Google it.

I would recommend ConvertXToDVD also. If you wanted easy and free, you can get the older freeware version of DivxToDVD from the same link. If you wanted free and better quality, and more options, then the tools jimmalenko mentions would be a good choice. But they would not be as easy.

  4. I would recommend the same, but HC instead of QuEnc - sometimes QuEnc may produce non compliant streams (bitrate).

You would likely need to use a different authoring program to get better menus. Most all of them are payware, such as TMPGEnc DVD Author, DVD-Lab or similar. DVDAuthorgui is one of the few that are freeware.

  7. As mentioned above, although ConvertXtoDVD isn't free anymore.
AVI2DVD or the Film Machine, used wth the included HC Enc can produce excellent resuts, and are both freeware & easy to use.
