I have a rip with 2 audio streams.
English = 1
French = 2
As soon as I get to VTS_1_04 the audio goes from the default (english) to French.
In 1_04 & 1_05 the audio properties have switched
French = 1
English = 2
I am a relative newb when it comes to fixing things like this. Some kind person on irc tried helping me with ifoedit where i disabled the french stream but it didn't make a difference to the vob files.
Any idea of the easiest way to sort this problem out?

The audio streams are stuck in the vobs during authoring -- sounds like perhaps you've got parts of 2 DVDs put together. Hopefully someone can post an *easy* way, but all I can think of at the moment...
You could try something like vobrator to extract & reinsert the audio tracks in reverse position -- I just tried to verify, not having used it for some time, & it won't run on my system so this is a guess.
You could demux using DGIndex per vob, then in a 2nd go-round, demux video from all vobs together (1 file). Reassemble ac3 using all eng & all french (see current thread), & author with muxman. If needed to retain menus etc, use VobBlanker to replace original title with new one.
