    ffmpeggui

What are you trying to do ? Are you converting AVI to DVD, or just conmverting mp3 to AC3 for AVI/divx files ?

Then use ffmeggui as suggested by guns1nger. Alternatively, you could use BeSweet, with one of the gui fronts - I prefer BeLight - much easier to use (for me) than the others, ie: the 'official' BeSweetGUI.

The nice thing about the BeSweet/Light combo is that is supports quite a few file formats - ac3, dts, mpa, mp2, mp3, ogg, wav, lst, mux, AND AVI/VOB directly..Although, with the last two you need to have a bit of common sense, ie: if doing more than straight *>ac3 (ie: sample rate conversion/audio is VBR), I would do the old [VirtualDub]>extract audio>WAV>BeSweet method, and avoid potential synch issues.

    [edit]
You could also give dbPowerAmp a try, if neither method works for you.. Add in any of the many plugins, and you could convert nearly any format to another - caveat being DBP is *free*, but due to licensing restrictions, the MP3 audio/plugin portion in no longer free (thank you Fraunhoffer! )

I seconf ffmpeggui - does what it's supposed to, and nothing else (God how I love that rare software philosophy!) But a question - why reencode to AC3 if you have an AVI with a nice mp3 audio track?

VirtualDubMod or AVIMuxGUI can add audio stream to an AVI.
But I can't make sense of your question: First, you have an AVI with MP3?
And you want an AVI with AC3 instead?
What's wrong with the mp3 AVI?
Who are "they", who give you the AC3?
    A mystery, this is!
