Sorry, this is a little OT, but there wasn't another forum I could find the answers on.
I would like to make printable ebook in pdf format this winter, however, I am a little unsure about going about it. Do you just take up in Word and start typing or is there software that is better suited to this sort of thing, like an ebook creator. The ebook will have lots of photos too so handling images will be important.
Any help is appreciated.

Yeah, you'll need a word processor like Word and then also a full version of Adobe Acrobat (obviously not just the free reader). Though I haven't tried it you should be able to set up chapters and a TOC in Word like you would normally and those chapter headings should carry over into the PDF as bookmarks. If not it isn't very difficult to add the PDF bookmarks for each chapter once the PDF is created.
