I Backed Up Big Fish & Booty Call, Both start with the Director Commentary by defualt ?

I tested both DVD's I backed up and it seems that the AC-3 2ch has the director Commentary and the AC-3 5.1 dosen't, is it fair to asume if I just use the 5.1 stream I won't get the DC anymore ?

I believe you are assuming correctly. I can't remember an instance in which the director's commentary track was in 5.1.
